5 Meaty Mains for Father’s Day

 

These dishes are easy to do for a Sunday lunch or dinner and will impress the whole family, not just Dad. If he is always the cook in the kitchen or at the grill, give him a break for Father’s Day and cook him one of these meaty mains.  

1. Cowboy Steak with Coffee and Chili Rub (pictured above)

Ground espresso coffee is a great base for Ellie Krieger’s rub that’s inspired by cowboys (who put anything on their steak that they had around). Start with ancho chili powder (or whatever chili powder you have on hand) to give the rub a smokiness, then add a bit of brown sugar, ground coriander and ground mustard. You’ll give great flavor to the meat without smothering it in a higher-calorie marinade.

2. Juicy Grilled Cheeseburgers

These quarter-pounders are lightened up with 90-percent-lean beef and a mere half-ounce of cheddar, and they’re served on wholesome whole-wheat English muffins, which means they clock in at less than 500 calories per serving.

3. Pork Tenderloin with Corn Panzanella Salad

This is perfect for a relaxing summer weeknight dinner — wiping down and reusing the skillet will cut down on cleanup after the meal! Combine whole-grain bread with a summer corn salad, and serve with low-fat yogurt and mango.

 

4. Grilled Chipotle Pork Tacos

These pork tacos are full of flavor, and the sweet pineapple side is a perfect complement. They’re ready in just 30 minutes, which means you won’t have to spend too much time at the grill. Grill the tortillas before serving, until grill marks appear and the tortillas are softened, then top them with the pork and a little slaw.

 

5. Marinated Flank Steak with Blue Cheese Sauce

Grilled onions and creamy blue cheese dressing top a lean piece of flank steak. Pounding out the meat will tenderize it, make it cook faster and even make it feel like a much larger portion.
