5 Healthy No-Cook Weeknight Dinners

There’s no need to slave over a hot stove during the dog days of summer. These healthy dinners are ready to go without lighting a flame.

Zucchini “Fettuccine” with Tomato Sauce (pictured above)

Whip out your spiralizer or trusty mandoline to make these pasta-free “zoodles.” Top with a tomato puree and you’ve got a delicious, low-cal meal in less than an hour.

Crunchy Avocado Salad

Build a well-balanced salad for an easy-to-cook weeknight dinner. Bobby Flay combined avocado, tomatoes, olives, chickpeas and tortilla chips so you get a healthy dose of vegetables, good-for-you fat, protein and carbs.

Roast Beef Sandwich with Watercress and Horseradish Mayonnaise

This roast beef sandwich is dressed with watercress, tomatoes and red onion. To help cut fat, regular mayo is combined with nonfat plain Greek yogurt, plus horseradish for some kick. Enjoy this sandwich with a no-cook soup like Ellie Krieger’s no-cook White Gazpacho with Grapes and Toasted Almonds.

Panzanella-Stuffed Heirloom Tomatoes

Head to your local farmers market to pick up fresh heirloom tomatoes and turn them into this refreshing dinner. Serve 2 per person for a dinner-sized portion.

Chinese Chicken Salad with Red Chile Peanut Dressing

Use leftover or store-bought rotisserie chicken to make a simple, high-protein weeknight salad.
