Just in time for Mother’s Day, we’re making a special toast (no, not the bubbly kind) that both moms and kids can enjoy. This crunchy, whole-grain breakfast option doesn’t even require a stovetop. Whether Mom has a sweet tooth or likes a savory breakfast (or both!), she’ll love these toasts. Plus, they’re perfectly portable, so you don’t even need a tray to serve her breakfast in bed. Kids can help with the prep and the spreads as well as the decorating.
Nutty Berry Toast: Have the kids spread almond butter on Mom’s favorite toasted bread — we like whole-grain varieties best. Decorate the spread with raspberries (let the kids get creative with a smiley face or Mom’s initials!). Then drizzle with a little honey and sprinkle with toasted nuts. Almond butter has more calcium and iron than peanut butter, and raspberries are rich in vitamins, antioxidants and fiber.
Spring Avocado Mash Toast: Halve a clove of garlic and let the kids rub it on a slice of Mom’s favorite toasted bread. Then throw half a chopped avocado, a handful each of peas and cilantro, the juice of 1 lime, 1 tablespoon Parmesan cheese and a generous sprinkle of salt in a bowl. Let the kids mash it all together with a potato masher or fork. Spread the mash on the garlic toast. Avocados are nutrient-dense and full of good fats, a nice pairing with protein-rich peas.
